Got something for you guys today. I made a Google Sheet that takes all of the games in the CAA (my team's conference), the winners of each game, and my confidence in that result, and produces a likelihood of whether each team in the conference will go 12-0, 11-1, 10-2, etc. It also shows how likely a team is to go 8-4 or better (or the equivalent for that team's number of games). It's a mock season with the added benefit of seeing the season results. If there's one thing I'd like to add it's the most likely overall season result, with the rankings of each team at the end.
If you want to use this for your own conference, simply replace the games in the FIRST sheet ONLY with the games from your conference, pick winners for each game, and put your confidence value (decimal from 0 to 1) for that win. Then, you must change the name of each team in cell G1 on each team sheet, so that the VLOOKUP works and can search for the team name in the results you've changed. The other sheets will automatically update based on the Results sheet and calculate the probability of each season result for each team.

Edit: You actually will have to change the ranges in column L of each team result sheet to match the Results sheet format because I doubt there will be the exact same number of games in each week for every conference.
